Healthy Turkish Lentil Soup

Instructions

1.

Heat olive oil in a large pot over medium heat.

Add chopped onions, carrots, and garlic. Sauté until vegetables are softened.

3.

Stir in lentils, tomato paste, cumin, paprika, salt, and pepper.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until lentils are tender.

5.

Using an immersion blender, puree the soup until smooth. Alternatively, transfer to a blender in batches and blend until smooth.

6.

Return the blended soup to the pot and heat over low heat.

7.

Serve hot and garnish with fresh parsley.
