Heat oil in a pan and add cumin seeds, mustard seeds, and curry leaves.
Add diced onions, tomatoes, and green chilies. Cook until onions turn translucent.
Add grated carrots, chopped bell peppers, and grated ginger. Cook for 2-3 minutes.
Sprinkle turmeric, red chili powder, and salt. Mix well.
Add soaked and drained poha (flattened rice). Cook for another 3-4 minutes.
Garnish with chopped coriander leaves and serve hot with a squeeze of lemon juice.
