Simple Thai Street Food - Lunch

Instructions

1.

Heat a non-stick pan over medium heat.

2.

Add 1 tablespoon of vegetable oil and heat it up.

3.

Add 200g of sliced chicken breast and cook until browned.

4.

Push the chicken to the side of the pan and add 1 sliced onion and 2 sliced bell peppers. Cook for a few minutes until tender.

5.

Push everything to the side of the pan again and crack in 2 eggs. Scramble them and mix with the other ingredients.

6.

Add 2 cups of cooked rice and 2 tablespoons of soy sauce to the pan. Stir everything together and cook for another 2-3 minutes.

7.

Serve the Thai street food in bowls and garnish with chopped fresh cilantro and a squeeze of lime juice.
